"I'm trying to be one of those experimenters," said Clinton. Clinton says he was inspired to follow a low-fat, plant-based diet by several doctors, including Dean Ornish, author of Dr. Dean Ornish's Program for Reversing Heart Disease. Ornish has been working with Clinton as one of his consulting physicians since 1993.

After Clinton's angioplasty and stents in 2010, Ornish says he contacted the former president "and I indicated that the moderate diet and lifestyle changes he'd made didn't go far enough to prevent his heart disease from progressing, but our research proved that more intensive changes could actually reverse it," he says.

Clinton joins the company of other vegan politicians and celebrities, including Ohio Congressman Dennis Kucinich, "Biggest Loser" trainer Bob Harper, actress Olivia Wilde and even Twitter co-founder Biz Stone. Colorado Congressman Jared Polis -- while not a strict vegan or vegetarian -- keeps a meat product-free home with his vegan partner, Marlon Reis, Politico reported. And former Indiana Congressman Andrew Jacobs Jr. is a vegetarian, according to Vegetarian Times magazine.

Elizabeth Kucinich, wife of Rep. Dennis Kucinich, told Eating Well that her and her husband's vegan lifestyle is inspired by compassion for living things, sustainability and health.

He told Wolf Blitzer on CNN that although he eats a little fish, he stays away from other meat - dairy too. He's learned to like almond milk.

His reasoning? His surgically cleared coronary arteries began to re-clog, he said on the CNN program. It was then that he learned that heart patients who adopt a plant-based diet usually start getting better on their own.

"Their bodies begin to heal themselves," he said. "Well, since I needed to lose a little weight for Chelsea's wedding, I thought I'd be a part of the experiment and see if I could be one of those."

I drink a protein supplement every morning — no dairy, I drink almond milk mixed in with fruit and a protein powder so I get the protein for the day when I start the day up. I did all this research, and I saw that 82 percent of the people since 1986 who have gone on a plant-based, no dairy, no meat of any kind, no chicken, no turkey — I eat very little fish, once in a while I’ll have a little fish — if you can do it, 82 percent of people have begun to heal themselves."
